The definitions of Cachaça and sugarcane spirit are contained in Decree 4851/03 and Normative Instruction 13/05 (Identity and Quality Standards).

These laws were created to protect the name Cachaça only for the product produced in Brazil.

Cachaça is the denomination that can be used for a sugarcane spirit that has an alcohol content between 38% vol and 48% vol.

A drink between 38% vol and 48% vol can also use only the name “Aguardente de Cana”, if you do not want to use the name Cachaça.

Above 48% vol up to 54% vol the drink can only be called Sugarcane Brandy.

The definition says that Cachaça can only be produced from fermented sugar cane juice, while sugar cane spirit can be produced either from sugar cane juice or from a simple alcoholic distillate of sugar cane.

Cachaça 51 has an alcohol content of 39%.
